Ingredients
2 pounds carrots, peeled and cut into sticks (or left whole if young and slender)
2 tablespoons olive oil
1 tablespoon pure maple syrup
2 garlic cloves, minced
1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
½ teaspoon ground cumin (optional, for warmth)
Salt and black pepper, to taste
Fresh parsley, dill, or chives, for garnish
Instructions
Preheat oven: 400°F (200°C). Line a baking sheet with parchment.
Season carrots: Toss carrots with olive oil, maple syrup, garlic, thyme, cumin (if using), salt, and pepper until evenly coated.
Roast: Spread in a single layer and roast 25–30 minutes, stirring once, until tender and caramelized at the edges.
Finish: Garnish with fresh herbs before serving.
